Ingredients:
Pork tenderloin:
- 600g pork fillet
Spice mix:
- 2 tbsp olive oil
- 2 tsp ground ginger
- 2 tsp ground cumin
- 2 tsp ground coriander
- 2 tsp ground turmeric
- Zest and juice from 1 lemon
- 1 bunch coriander, coarsely chopped
Couscous:
- 250g couscous
- 1 tbsp extra virgin olive oil
- 2 large handfuls of chopped coriander and oregano
- 400g canned chickpeas, drained and rinsed
- 1 pomegranate
- Zest and juice from 1 lemon
- Sea salt
- Black pepper
Haricots Greens:
- 200g green beans
- 2 teaspoons Berber chili spice
- Salt

🥘 Mix olive oil, ginger, cumin, coriander, turmeric, lemon peel, lemon juice, and chopped coriander into a smooth spice mixture.

🥘 Cover the pork fillet with the spice mixture and brown the meat for a few minutes in a frying pan. Add a few tablespoons of water and roast in the oven at 180°C for about 15 minutes.
