Recipe: Seasoned Pork Fillet with Couscous Salad and Haricots Verts


Pork tenderloin:

  • 600g pork fillet

Spice mix:

  • 2 tbsp olive oil
  • 2 tsp ground ginger
  • 2 tsp ground cumin
  • 2 tsp ground coriander
  • 2 tsp ground turmeric
  • Zest and juice from 1 lemon
  • 1 bunch coriander, coarsely chopped


  • 250g couscous
  • 1 tbsp extra virgin olive oil
  • 2 large handfuls of chopped coriander and oregano
  • 400g canned chickpeas, drained and rinsed
  • 1 pomegranate
  • Zest and juice from 1 lemon
  • Sea salt
  • Black pepper

Haricots Greens:

  • 200g green beans
  • 2 teaspoons Berber chili spice
  • Salt

Do this:

  1. 🥘 Cook couscous according to package instructions.

  2. 🥘 Mix olive oil, ginger, cumin, coriander, turmeric, lemon peel, lemon juice, and chopped coriander into a smooth spice mixture.

  3. 🥘 Cover the pork fillet with the spice mixture and brown the meat for a few minutes in a frying pan. Add a few tablespoons of water and roast in the oven at 180°C for about 15 minutes.

  4. 🥘 Meanwhile, fluff up the couscous with olive oil, herbs, chickpeas, pomegranate, lemon zest and juice. Season with salt and black pepper.

  5. 🥘 Sauté green beans in oil, season with Berbér chili spice and salt.

  6. 🥘 Serve the pork fillet on the couscous salad and top with green beans. Enjoy this flavor explosion!
