Beetroot soup

Mondays deserve extra care and goodness, and today I have the perfect recipe for a warm, colorful and delicious start to the week - Beetroot Soup! A rich and healthy soup that not only appeals to the taste buds but also provides an explosion of color on the plate. 💜✨

Ingredients:

  • 2 fresh turmeric roots
  • 2 red onions
  • 500 g fresh beetroot
  • 2 carrots
  • 200 g celeriac
  • 4 cloves of garlic
  • 2 bay leaves
  • 12 dl chicken broth
  • 200 g savoy cabbage
  • 2 tomatoes
  • Salt and pepper
  • Greek yogurt
  • Fresh dill

Do this:

  1. Peel and chop the turmeric roots. Finely chop onion and garlic. Peel and dice beetroot, celeriac and carrots.

  2. Heat a large pot and add olive oil. Saute onion, garlic, beetroot, celery root, carrots, turmeric and bay leaves for about five minutes, stirring occasionally.

  3. Add chicken broth, salt and pepper. Let the soup simmer for 15 minutes.

  4. Cut the savoy cabbage into thin strips and dice the tomatoes. Add both ingredients to the soup and simmer for another 20 minutes.

  5. Serve the soup in a bowl, topped with a dollop of Greek yogurt and fresh chopped dill.
