Green pea soup

Ingredients:
• 500 g frozen green peas
• 4 sprigs of fresh parsley
• 1 yellow onion • 3 cloves of garlic
• 1 dl dry white wine
• 7 dl of water
• 2 chicken stock cubes
• 1 dl crème fraîche
• 1 dl whipping cream
• 1 teaspoon white wine vinegar
• Cayenne pepper
• Salt
• Freshly ground black pepper

Accessories:
• Chopped chives
• 0.5 dl whipping cream

Instructions:

  1. Peel and finely chop the onion, press the garlic and chop the parsley.

  2. Saute onion and parsley in olive oil until soft and glossy over medium heat in a large saucepan. Add finely chopped garlic.

  3. Pour in the wine and let it simmer for a minute. Add water and stock cubes. Let it simmer for 5-6 minutes.

  4. Fold in the peas and simmer for 2-3 minutes. Stir in crème fraîche and whipped cream.

  5. Blend the soup until smooth with an immersion blender. Season with white wine vinegar, salt, freshly ground black pepper and a pinch of cayenne pepper.

  6. Whip the cream until it becomes slightly foamy. Drizzle the cream over the soup and garnish with chopped chives. Serve with toasted bread.
